Kelsey Piepkorn, an environmental science major at Bethel University (St. Paul, MN), says that in high school, her statistics class watched a movie on the carbon footprint. "It blew me away that one person could emit so much carbon."
Kelsey testifies that, "Genesis 2:15 says that 'then God took man and placed in the garden and told him to tend it and take care of it.' Being that that's the first commandment, I want to honor that in all I do, and that's what brought me into creation care."
When it comes to addressing the climate crisis, Kelsey sees the monumental challenge it poses to our agricultural systems, and wants to get involved with urban gardens or other sustainable alternatives to how people get food.
